Caramel Apple Cookies

These cookies are “mock” caramel because I used butterscotch chips instead of caramels. Oats and whole wheat flour are used instead of white flour, applesauce beefs up the apple taste and provides added moisture. Enjoy!

Caramel Apple Cookies

Get your ingredients together and you’re set to bake!

In a mixer, combine:

1/2 c butter (softened)

3/4 c organic brown sugar

3/4 c unsweetened applesauce

1t vanilla

1 large egg

Letting your butter sit on the counter for an hour before cooking will ensure it is well-softened and will blend easily

Peel and shred 2 apples. The key here is to press the excess liquid out, otherwise your cookies will be too mushy. I just grated onto paper towel and pressed.

Add to your wet ingredients:

1 1/3 c whole wheat flour

1 1/2c rolled oats (I used regular, not instant)

1t baking soda

1/2t salt

3/4t cinnamon

Fold in:

1/2 c butterscotch chips

1/2 c chopped walnuts

shredded apples

This is amazingly tasty dough!

Pop into a 350 degree oven for 10-12 minutes and enjoy the smell of apples and cinnamon flooding your house!
